  • Fresh dill: a few fresh dill leaves add a pop of flavor to this salad
  • Vegetables: sliced red onions, kalamata olives, and cherry tomatoes
  • Hummus: spread on the bottom of the plate, serves as a dressing alternative (try making your own from beets!)

🧊 How to store

  1. Refrigerator storage: Store leftover salad in an airtight container in the refrigerator for up to three days.
  2. Freezer storage: I don’t recommend freezing this salad as arugula is a fragile green that doesn’t freeze well.

Leftovers and storage: Store leftover salad in an airtight container in the refrigerator for up to three days. Do not freeze.
Nutrition notes: Nutrition information is an estimate using all listed ingredients. This recipe uses all plant-based ingredients naturally gluten free (if you choose gluten free falafel).
