  • Hummus: spread on the bottom of the plate, serves as a dressing alternative (try making your own from beets!)
  • Tzatziki sauce: a light, creamy Greek sauce; buy pre-made or make your own plant-based tzatziki
  • Olive oil: a drizzle of extra virgin olive oil
  • Sunflower seeds: a sprinkle of seeds adds a nice crunchy texture

Smear hummus along the bottom of a salad bowl or plate as the base layer of this salad.

Then add arugula and fresh dill on top. Top salad with chickpeas, red onion, kalamata olives, and sunflower seeds.

  • 3 tablespoons hummus
  • 1 cup arugula
  • 2 tablespoons fresh dill

  • ¼ cup kalamata olives
  • 3 tablespoons red onion sliced thin

  • 2 tablespoons sunflower seeds
  • ¼ cup tzatziki sauce
